Last week, I found some new spoons.
A full dozen of these were on sale, and clearly needed to make their way into our standard rotation. The very first thought I had was a mini caprese salad – and that’s just what we had a chance to do this weekend.
Since we had some pesto left over from Friday’s dinner, I decided to forgo the basil leaf – just one sliced cherry tomato, and one sliced mini-mozzerella, topped with a dollop of pesto, a sprinkle of sea salt and a drizzle of balsamic.
These were a hit, and I’m eager to concoct new uses for them. What do you think? What comes to mind?
