For Love of Leftovers

Our weekend turned out to include a veritable mini-Thanksgiving – roasted chickens, caramelized brussel sprouts, French onion soup, cranberries on salads, potatoes, pumpkin pie and fresh, homemade bread.

Also, not a single photograph was taken.

This is regrettable, but frankly the larger preoccupation in our household today is what on earth to do with the leftovers – a whole second chicken, in fact. Though Jack does not necessarily agree, I’m a fan of mixing foods, and this caught my eye this afternoon.

Yes, the Thanksgiving Turkey Cake.

I realize this one will be controversial, but I for one will be keeping the concept in mind as we approach the holidays. Would you try it?     It would need to be served hot, but yes, I would try it. It resembles a very festive shepherd’s pie, and you know I’m a fan of all things marshmallow.
